Prawn, spinach and coriander rice with ginger, chilli and garlic

Ingredients

  • 200 gram brown Rice
  • 500 gram king prawns
  • 200 gram spinach
  • 25 gram coriander
  • 1 tbs grated ginger
  • 2 cloves garlic
  • 1 red chilli
  • 2 - 3 tbs soy sauce

Instructions

  • Cook the brown rice (or a rice of your choice)
  • Marinated the prawns with the ginger, garlic, soy and some olive oil
  • Stir fry the prawns, add the cooked rice, than the spinach and finish with the coriander and soy sauce.
  • Top with fresh coriander leaves and chopped chilli
