Prawn, spinach and coriander rice with ginger, chilli and garlic

Ingredients
- 200 gram brown Rice
- 500 gram king prawns
- 200 gram spinach
- 25 gram coriander
- 1 tbs grated ginger
- 2 cloves garlic
- 1 red chilli
- 2 - 3 tbs soy sauce
Instructions
- Cook the brown rice (or a rice of your choice)
- Marinated the prawns with the ginger, garlic, soy and some olive oil
- Stir fry the prawns, add the cooked rice, than the spinach and finish with the coriander and soy sauce.
- Top with fresh coriander leaves and chopped chilli
